- 1/2 cup edamame, cooked and cooled
- 2 scallions, chopped
- 1/4 cup cilantro, chopped
- 1 tbsp sesame seeds
- 1/4 cup sliced almonds or cashews
Dressing:
- 2 tbsp rice vinegar
- 1 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 tsp fresh ginger, minced
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Prepare the Blood Oranges: Peel and slice blood oranges into rounds or segments, removing any seeds.
- Chop the Vegetables: Thinly slice red cabbage, julienne carrots, and cut cucumber into thin half-moons. Chop scallions and cilantro.
- Cook the Edamame: If using frozen edamame, steam or boil according to package instructions. Drain and let cool.
- Make the Dressing: In a small bowl, whisk together rice vinegar, soy sauce or tamari, sesame oil, honey or maple syrup, minced ginger, minced garlic, and red pepper flakes. Adjust seasoning with salt and pepper.
- Assemble the Salad: In a large bowl, combine mixed greens, red cabbage, carrots, cucumber, edamame, scallions, and cilantro. Toss gently.
- Add the Blood Oranges: Arrange blood orange slices on top.
- Sprinkle the Toppings: Garnish with sesame seeds and sliced almonds or cashews.
- Drizzle with Dressing: Pour the dressing over the salad just before serving and toss gently to coat.
