  • 1 clove garlic, minced

  • 2 tbsp vegetable oil (for frying)
  • Optional: 1/2 cup seafood (shrimp, squid), 1/4 cup kimchi (chopped), 1/4 cup mushrooms, or other vegetables

Instructions

  1. Prepare the Scallions – Wash and cut the scallions into 2-3 inch pieces.
  2. Make the Batter – In a mixing bowl, combine all-purpose flour, rice flour, water, egg, salt, and sugar. Stir until smooth.
  3. Heat the Pan – Add vegetable oil to a non-stick or cast-iron skillet over medium heat.
  4. Assemble the Pancake – Lay scallions in the pan in a single layer. If using optional ingredients, distribute them evenly.
  5. Pour the Batter – Slowly pour the batter over the scallions and any additional ingredients, ensuring even coverage.
  6. Cook Until Crispy – Fry for 4-5 minutes until edges are golden and crispy.
  7. Flip and Cook the Other Side – Carefully flip the pancake and cook for another 3-4 minutes until golden brown.
