Instructions

  • Cook the chicken: Season chicken with salt, pepper, and olive oil. Grill, bake, or sauté until fully cooked. Shred or dice into bite-sized pieces.
  • Prepare tzatziki dressing: Combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and olive oil in a medium bowl. Mix well and season with salt and pepper to taste. Adjust consistency with additional yogurt or olive oil if needed.
  • Chop vegetables: Finely chop red onion, halve cherry tomatoes, and prepare the lettuce or greens. Optional: add diced bell peppers or shredded carrots for extra crunch.
  • Combine salad: In a large bowl, mix cooked chicken, chopped vegetables, and parsley. Pour the tzatziki dressing over and toss gently to coat.
  • Assemble and serve: Lay the lettuce or mixed greens on a platter or in individual bowls. Top with the chicken salad mixture.
  • Garnish and enjoy: Sprinkle with fresh dill or parsley. Serve immediately or chill for 15–20 minutes to enhance flavors.
