Vanilla Pudding Cake

  • Total Time: 50-55 minutes
  • Yield: 6-8 servings 1x

Description

Vanilla pudding cake is a rich and moist self-saucing dessert that combines fluffy vanilla cake with a creamy pudding layer. Easy to make and perfect for any occasion, this comforting treat is a must-try!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup melted butter
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 1 1/2 cups boiling water

Instructions

Prepare the Oven and Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with butter or cooking spray to prevent sticking.

Make the Cake Batter 3. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. 4. In a separate bowl, beat the eggs and add melted butter, milk, and vanilla extract. 5. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

Prepare the Pudding Layer 6. In another bowl, mix instant vanilla pudding mix with heavy cream until combined. 7. Pour the pudding mixture over the cake batter in the baking dish.

Create the Sauce 8. Sprinkle brown sugar evenly over the pudding layer. 9. Pour boiling water gently over the top without stirring. This will help create the self-saucing effect.

Bake the Cake 10. Place the dish in the oven and bake for 35-40 minutes or until the cake is golden brown and set on top. 11. The pudding will sink to the bottom, forming a luscious sauce.

Cool and Serve 12. Allow the cake to cool for a few minutes before serving. 13. Serve warm with whipped cream, ice cream, or a dusting of powdered sugar.

Notes

  • Chocolate Twist – Replace vanilla pudding mix with chocolate pudding for a rich, chocolatey version.
  • Coconut Delight – Add shredded coconut to the batter and top with toasted coconut.
  • Berry Infusion – Fold fresh or frozen berries into the batter for a fruity touch.
  • Cinnamon Spice – Add a teaspoon of cinnamon to the dry ingredients for a warm, spiced flavor.
  • Nutty Crunch – Top with chopped pecans or walnuts for added texture.
