Instructions

  • Heat the Dairy – In a saucepan over medium heat, combine the milk and heavy cream. Stir occasionally and heat until warm but not boiling.
  • Prepare the Egg Mixture – In a separate bowl, whisk together the sugar, egg yolks, and a pinch of salt until pale and slightly thickened.
  • Temper the Eggs – Gradually whisk a small amount of the warm milk mixture into the egg mixture to prevent scrambling.
  • Combine and Cook – Pour the tempered egg mixture back into the saucepan. Cook over low heat, stirring constantly, until the sauce thickens and coats the back of a spoon.
  • Add Vanilla – Remove from heat and stir in vanilla extract or vanilla bean seeds.
  • Strain for Smoothness – For a silkier texture, strain the sauce through a fine-mesh sieve.
  • Cool and Serve – Let cool slightly before serving. It will continue to thicken as it cools. Serve warm or chilled.
