Instructions
- Preheat & Prep: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare Filling: If using fruit preserves, thicken by mixing with cornstarch and heating briefly, then let cool.
- Cut Pastry: Roll out the puff pastry on a lightly floured surface and cut into small rectangles.
- Fill Pastries: Place a spoonful of filling in the center of each rectangle.
- Fold & Seal: Fold one edge over slightly to resemble an envelope, tuck in the other edges, and seal with plant-based milk.
- Bake: Arrange on the baking sheet, brush with plant-based milk, and bake for 15-20 minutes until golden brown.
- Prepare Glaze: Mix powdered sugar, vanilla extract, and plant-based milk until smooth.
