- 1 small onion, diced

- 1 (15 oz) can tomato sauce
- 1/2 cup beef broth
- 8 small corn or flour tortillas
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 (4 oz) can green chilies
- Sour cream (optional, for serving)
- Fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish and set aside.
- Cook the beef mixture: In a large skillet over medium heat, heat olive oil and sauté the onion until softened. Add garlic and cook for another minute.
- Brown the beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, then drain excess fat.
- Season the filling: Stir in chili powder, cumin, paprika, salt, and black pepper. Mix well.
- Prepare the enchilada sauce: Pour in tomato sauce and beef broth, stirring to combine. Simmer for 5 minutes until slightly thickened.
- Assemble the enchiladas: Spoon a portion of the beef mixture onto each tortilla, sprinkle some cheese, and roll them up tightly.
- Arrange in the dish: Place the rolled tortillas seam-side down in the prepared baking dish.
- Add the sauce and cheese: Pour the remaining enchilada sauce over the tortillas and generously sprinkle with shredded cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
- Garnish and serve: Remove from the oven and let it rest for a few minutes. Top with chopped cilantro and serve with sour cream and lime wedges.
