- 4 boneless, skinless chicken breasts
- 4 oz Brie cheese, sliced
- 8 slices prosciutto
- 1 tbsp orange zest
- ¼ cup fresh orange juice
- 2 cloves garlic, minced
- 1 tbsp honey
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp butter
Instructions
- Prepare the chicken: Slice each chicken breast horizontally to create a pocket, without cutting all the way through.
- Stuff with Brie: Insert Brie slices into the pocket of each chicken breast.
- Wrap with prosciutto: Lay out prosciutto slices and tightly wrap around each stuffed chicken breast to secure the cheese.
- Make the citrus marinade: In a bowl, whisk together orange zest, orange juice, minced garlic, honey, olive oil, thyme, salt, and black pepper.
- Marinate the chicken: Brush the marinade generously over the wrapped chicken breasts and let sit for at least 15 minutes.
- Sear the chicken: Melt butter in a large skillet over medium heat and sear the chicken on each side for 3-4 minutes until crispy and golden brown.
- Bake to perfection: Transfer to a preheated oven at 375°F (190°C) and bake for 15-20 minutes until fully cooked (internal temperature of 165°F/75°C).
- Rest and serve: Let rest for a few minutes before slicing. Serve with additional orange zest or a drizzle of honey if desired.
Notes
- Storage: Refrigerate leftovers in an airtight container for up to 3 days.
- Reheating: Warm in the oven at 300°F (150°C) for 10 minutes or microwave in short bursts.
- Freezing: Wrap individually and freeze for up to 2 months. Thaw in the fridge before reheating.
