- 1 1/2 cups vegetable stock
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 1 teaspoon vinegar (white or malt)
- Salt and pepper to taste
- 1 tablespoon oil
- 2 tablespoons water (for cornstarch mixture)
Instructions
- Sauté the aromatics: Heat oil in a saucepan over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent.
- Add the spices: Stir in the curry powder, turmeric, ground ginger, and paprika, cooking for another minute until fragrant.
- Create the base: Add tomato paste and mix well before gradually pouring in the vegetable stock, stirring continuously.
- Thicken the sauce: Dissolve cornstarch in 2 tablespoons of water and add it to the pan, stirring until the sauce begins to thicken.
- Enhance the flavor: Stir in sugar, vinegar, salt, and pepper to balance the flavors.
- Simmer and blend (optional): Let the sauce simmer for a few minutes. For a smoother consistency, blend using an immersion blender.
