  • 1 1/2 cups vegetable stock
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon vinegar (white or malt)
  • Salt and pepper to taste
  • 1 tablespoon oil
  • 2 tablespoons water (for cornstarch mixture)

Instructions

  1. Sauté the aromatics: Heat oil in a saucepan over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent.
  2. Add the spices: Stir in the curry powder, turmeric, ground ginger, and paprika, cooking for another minute until fragrant.
  3. Create the base: Add tomato paste and mix well before gradually pouring in the vegetable stock, stirring continuously.
  4. Thicken the sauce: Dissolve cornstarch in 2 tablespoons of water and add it to the pan, stirring until the sauce begins to thicken.
  5. Enhance the flavor: Stir in sugar, vinegar, salt, and pepper to balance the flavors.
  6. Simmer and blend (optional): Let the sauce simmer for a few minutes. For a smoother consistency, blend using an immersion blender.
  7. Serve: Enjoy your chip shop curry sauce warm, poured over chips, fish, or rice.
