Instructions

- Whisk the Egg Yolks and Sugar – In a separate bowl, whisk the egg yolks, granulated sugar, and cornstarch until the mixture becomes pale and thick.
- Temper the Egg Mixture – Slowly pour a small amount of the warm milk mixture into the egg mixture, whisking constantly to prevent curdling.
- Cook the Custard – Pour the tempered egg mixture back into the saucepan with the rest of the milk and cream. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Incorporate the Chocolate – Remove the custard from the heat and whisk in the melted chocolate, butter, vanilla extract, and salt until smooth and fully combined.
- Strain for Silkiness – For an ultra-smooth texture, strain the budino through a fine-mesh sieve into a clean bowl.
- Chill and Set – Divide the mixture into serving cups or ramekins and refrigerate for at least 4 hours, or until firm.
