Colcannon Recipe (Irish Mashed Potatoes)

  • Total Time: 30 minutes
  • Yield: 4-6 servings 1x

Description

“Irish Colcannon is a creamy mashed potato dish with cabbage or kale, butter, and scallions. Perfect for St. Patrick’s Day or any hearty meal, this easy and flavorful side dish is a must-try!”

Ingredients

Scale
  • 2 lbs potatoes (Russet or Yukon Gold recommended)
  • 4 tbsp butter (plus extra for serving)
  • 1/2 cup milk or heavy cream
  • 2 cups chopped cabbage or kale
  • 4 scallions (or 1 leek, finely chopped)
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 clove garlic, minced (optional)

Instructions

  1. Prepare the Potatoes: Peel and cut the potatoes into chunks. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
  2. Cook the Greens: While the potatoes are boiling, melt some butter in a large pan over medium heat. Add the chopped cabbage or kale and sauté until softened. Stir in the scallions and cook for another minute.
  3. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a ricer.
  4. Combine Ingredients: Add warm milk or cream and more butter to the potatoes, mashing until smooth. Stir in the cooked greens and scallions.
  5. Season to Taste: Add salt, black pepper, and garlic if using. Mix well and adjust seasoning as needed.
  6. Serve Warm: Transfer to a serving dish, top with additional butter, and enjoy!

Notes

  • Bacon Colcannon: Add crispy, crumbled bacon for extra flavor.
  • Cheesy Colcannon: Stir in shredded Irish cheddar for a cheesy twist.
  • Vegan Colcannon: Use plant-based butter and milk alternatives.
  • Sweet Potato Colcannon: Swap regular potatoes for sweet potatoes for a different take.
  • Leek Colcannon: Replace scallions with leeks for a milder, sweeter taste.
