- 2 lbs potatoes (Russet or Yukon Gold recommended)
- 4 tbsp butter (plus extra for serving)
- 1/2 cup milk or heavy cream
- 2 cups chopped cabbage or kale
- 4 scallions (or 1 leek, finely chopped)
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 clove garlic, minced (optional)
Instructions
- Prepare the Potatoes: Peel and cut the potatoes into chunks. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.
- Cook the Greens: While the potatoes are boiling, melt some butter in a large pan over medium heat. Add the chopped cabbage or kale and sauté until softened. Stir in the scallions and cook for another minute.
- Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or a ricer.
- Combine Ingredients: Add warm milk or cream and more butter to the potatoes, mashing until smooth. Stir in the cooked greens and scallions.
- Season to Taste: Add salt, black pepper, and garlic if using. Mix well and adjust seasoning as needed.
- Serve Warm: Transfer to a serving dish, top with additional butter, and enjoy!
