Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup tahini
  • ⅓ cup dill pickles, chopped
  • 3 tbsp pickle juice
  • 2 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 24 tbsp water, as needed

Instructions

  • Prepare the chickpeas – If using canned chickpeas, drain and rinse well. For extra smooth hummus, remove the skins by rubbing them between your fingers.
  • Blend the base – In a food processor, combine chickpeas, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
  • Add flavor – Add chopped dill pickles, pickle juice, fresh dill, cumin, salt, and black pepper. Blend again until fully incorporated.
  • Adjust consistency – Add water gradually while blending until you reach the desired smoothness.
  • Taste & refine – Adjust seasoning as needed with more lemon juice, dill, or pickle juice.
  • Serve – Transfer to a bowl, drizzle with olive oil, and garnish with extra pickles and fresh dill if desired.
