- 1 can (15 oz) chickpeas, drained and rinsed
- ¼ cup tahini
- ⅓ cup dill pickles, chopped
- 3 tbsp pickle juice
- 2 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- ½ tsp ground cumin
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 2–4 tbsp water, as needed
Instructions
- Prepare the chickpeas – If using canned chickpeas, drain and rinse well. For extra smooth hummus, remove the skins by rubbing them between your fingers.
- Blend the base – In a food processor, combine chickpeas, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
- Add flavor – Add chopped dill pickles, pickle juice, fresh dill, cumin, salt, and black pepper. Blend again until fully incorporated.
- Adjust consistency – Add water gradually while blending until you reach the desired smoothness.
- Taste & refine – Adjust seasoning as needed with more lemon juice, dill, or pickle juice.
- Serve – Transfer to a bowl, drizzle with olive oil, and garnish with extra pickles and fresh dill if desired.
