Prepare the Chicken: Season the chicken with salt and black pepper on both sides. If using chicken breasts, pound them to an even thickness for uniform cooking.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.

Sauté the Aromatics: In the same skillet, melt butter and add chopped onions. Cook until translucent, then add minced garlic and sliced mushrooms. Sauté until mushrooms release their juices and become golden brown.

Deglaze the Pan: Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Let the liquid reduce slightly.
