Description

  • 4 boneless, skinless chicken breasts or thighs

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 small onion, chopped

  • 8 oz fresh mushrooms (cremini or button), sliced

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup Parmesan cheese, grated

  • 1 tsp fresh thyme or parsley, chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp flour (optional, for thickening)


Instructions

  1. Prepare the Chicken: Season the chicken with salt and black pepper on both sides. If using chicken breasts, pound them to an even thickness for uniform cooking.

  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.

  3. Sauté the Aromatics: In the same skillet, melt butter and add chopped onions. Cook until translucent, then add minced garlic and sliced mushrooms. Sauté until mushrooms release their juices and become golden brown.

  4. Deglaze the Pan: Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Let the liquid reduce slightly.

  5. Make the Creamy Sauce: Lower the heat and stir in heavy cream and Parmesan cheese. Let the sauce simmer and thicken for a few minutes. If a thicker consistency is desired, mix flour with a little water and stir it in.

  6. Return the Chicken: Place the seared chicken back into the skillet, spooning sauce over the top. Cover and simmer for another 5-10 minutes, until the chicken is fully cooked.

  7. Garnish and Serve: Sprinkle with fresh thyme or parsley and serve immediately with your preferred side.
