- 2 eggs
- ¼ cup heavy cream
- ½ cup almond flour
- ¼ cup coconut flour
- ½ cup grated Parmesan cheese
- ½ cup crushed pork rinds
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Avocado oil spray
Instructions
- Prepare the Onions – Peel and slice the onions into thick rings. Separate them carefully and set aside.
- Make the Coating – In a bowl, whisk together eggs and heavy cream. In another bowl, mix almond flour, coconut flour, Parmesan cheese, crushed pork rinds, paprika, garlic powder, onion powder, salt, and black pepper.
- Coat the Onion Rings – Dip each ring into the egg mixture, let excess drip off, then dredge in the dry mixture until fully coated. Place on a parchment-lined baking sheet.
- Preheat – Preheat the air fryer to 375°F (190°C) or the oven to 400°F (200°C).
- Cook – Lightly spray with avocado oil. Air fry for 8-10 minutes, flipping halfway, or bake for 15-18 minutes until golden brown and crispy.
- Serve – Enjoy hot with your favorite keto-friendly dipping sauce.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in an air fryer at 375°F for 3-5 minutes or bake at 400°F for 5-7 minutes. Avoid microwaving to prevent sogginess.
