  • 2 eggs
  • ¼ cup heavy cream
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ½ cup grated Parmesan cheese
  • ½ cup crushed pork rinds
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Avocado oil spray

Instructions

  • Prepare the Onions – Peel and slice the onions into thick rings. Separate them carefully and set aside.
  • Make the Coating – In a bowl, whisk together eggs and heavy cream. In another bowl, mix almond flour, coconut flour, Parmesan cheese, crushed pork rinds, paprika, garlic powder, onion powder, salt, and black pepper.
  • Coat the Onion Rings – Dip each ring into the egg mixture, let excess drip off, then dredge in the dry mixture until fully coated. Place on a parchment-lined baking sheet.
  • Preheat – Preheat the air fryer to 375°F (190°C) or the oven to 400°F (200°C).
  • Cook – Lightly spray with avocado oil. Air fry for 8-10 minutes, flipping halfway, or bake for 15-18 minutes until golden brown and crispy.
  • Serve – Enjoy hot with your favorite keto-friendly dipping sauce.
