- 1 lb ground beef or lamb
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1/2 cup Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 2 eggs
- 1 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 cup crushed pita chips or bread crumbs (optional)
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a skillet over medium heat, heat olive oil and sauté onions until soft. Add garlic and cook until fragrant.
- Add ground beef or lamb, breaking it apart as it cooks. Stir in oregano, thyme, cumin, paprika, salt, black pepper, and red pepper flakes. Cook until fully browned.
- Stir in chopped bell peppers and tomatoes. Cook until vegetables are softened and well combined with the meat.
- Transfer the meat and vegetable mixture into the greased baking dish.
- In a bowl, whisk together Greek yogurt, eggs, and crumbled feta cheese. Pour evenly over the casserole.
- Sprinkle shredded mozzarella cheese on top. If using, add crushed pita chips or breadcrumbs for a crispy topping.
- Bake for 25-30 minutes or until golden and bubbly.
- Remove from oven, let cool for a few minutes, then garnish with fresh parsley before serving.

- Refrigeration: Store in an airtight container for up to 4 days.
- Freezing: Freeze in portions for up to 3 months.
- Reheating: Warm in the oven at 350°F (175°C) for 10-15 minutes or microwave in short bursts.
