  • 1/4 cup sun-dried tomatoes, diced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Toothpicks or kitchen twine

Instructions

  1. Prepare the Chicken: Slice each chicken breast horizontally to create a pocket, ensuring not to cut all the way through.
  2. Make the Filling: In a bowl, mix cream cheese, chopped spinach, minced garlic, Parmesan cheese, mozzarella, and diced sun-dried tomatoes until well combined.
  3. Stuff the Chicken: Spoon the filling evenly into each chicken pocket and secure with toothpicks or kitchen twine.
  4. Season the Chicken: Drizzle olive oil over the chicken breasts and season with Italian seasoning, paprika, salt, and black pepper.
  5. Cook the Chicken:
    • Oven Method: Preheat oven to 375°F (190°C). Place stuffed chicken in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
    • Stovetop Method: Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown, then transfer to a 375°F (190°C) oven for 10-15 minutes to finish cooking.
  6. Rest and Serve: Let the chicken rest for a few minutes before slicing. Serve hot and enjoy!
