Description
These Easy Cottage Cheese Egg Bites are a creamy, protein-packed breakfast inspired by Starbucks’ sous vide egg bites. Made with cottage cheese, eggs, and a blend of cheeses, they’re fluffy, flavorful, and meal prep-friendly—without the need for special equipment.
Ingredients
Scale
- 6 large eggs
- ½ cup cottage cheese
- ½ cup shredded cheese (Monterey Jack, cheddar, or Gruyere)
- ¼ cup heavy cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ cup cooked bacon or diced vegetables (optional)
- Cooking spray or butter (for greasing)
Instructions
- Preheat oven to 325°F (163°C) and grease a muffin tin with cooking spray or butter.
- Blend the mixture – In a blender, combine eggs, cottage cheese, shredded cheese, heavy cream, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- Add mix-ins – Evenly distribute bacon, spinach, bell peppers, or other desired ingredients into the greased muffin tin.
- Pour the batter – Fill each muffin cup about ¾ full with the blended egg mixture.
- Bake – Place in the oven and bake for 25-30 minutes until set and slightly golden on top.
- Cool and remove – Let cool for a few minutes before carefully removing from the tin.
- Serve and enjoy – Eat warm or store for later.
Notes
- For best texture, use a silicone muffin tray or grease the tin well.
- To make without a blender, whisk the eggs and cottage cheese thoroughly for a chunkier texture.
- Customize your bites by adding jalapeños, mushrooms, sun-dried tomatoes, or herbs.
- For an air fryer version, bake at 300°F for 12-15 minutes.
