  • ¼ cup fresh basil, chopped

Instructions

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain.
  2. Prepare the Tomatoes:
    Dice fresh tomatoes. If using cherry tomatoes, cut in half; for larger tomatoes, remove seeds for a smoother sauce.
  3. Sauté the Garlic:
    Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant, stirring frequently.
  4. Cook the Tomatoes:
    Add diced tomatoes to the skillet. Season with salt, black pepper, and red pepper flakes (if using). Cook for 5–7 minutes until tomatoes soften and release their juices.
  5. Make the Cream Sauce:
    Lower the heat and stir in the heavy cream. Simmer for 2–3 minutes, then add grated Parmesan. Stir until smooth and creamy.
  6. Combine Pasta and Sauce:
    Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss to coat evenly, adjusting the sauce consistency with more pasta water if needed.
  7. Garnish and Serve:
    Remove from heat. Sprinkle with fresh basil and serve immediately with extra Parmesan on the side.
