Ingredients

Scale
  • 4 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 green onions, chopped
  • 1/2 cup mushrooms, sliced
  • 1/2 cup carrots, julienned
  • 1 cup baby spinach or bok choy
  • 1 cup cooked chicken, tofu, or shrimp (optional)
  • 4 servings ramen noodles
  • 2 soft-boiled eggs, halved
  • 1/2 cup corn kernels
  • 2 sheets nori (seaweed), cut into strips
  • 1/2 tsp chili flakes or sriracha (optional)
  • 1 tbsp sesame seeds

Instructions

  1. Prepare the Broth: In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant. Pour in the broth and bring to a gentle simmer.
  2. Season the Broth: Stir in soy sauce and sliced mushrooms. Simmer for 10-15 minutes to develop flavor.
  3. Cook the Noodles: In a separate pot, cook ramen noodles according to package instructions. Drain and set aside.
  4. Prepare the Toppings: While the broth simmers, prepare toppings such as sliced carrots, chopped green onions, corn, and soft-boiled eggs. Heat cooked chicken, tofu, or shrimp if using.
  5. Assemble the Ramen: Divide the cooked noodles into bowls. Ladle hot broth over the noodles and arrange toppings.
  6. Garnish and Serve: Sprinkle sesame seeds, drizzle sesame oil, and add nori. For spice, add chili flakes or sriracha. Serve immediately.

Notes
