  • Total Time: 55 minutes
  • Yield: 4-6 servings 1x

Description

Easy porcupine meatballs made with ground beef and rice, simmered in a rich tomato sauce. A hearty, family-friendly meal perfect for busy weeknights.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup uncooked long-grain white rice
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (15 oz) tomato sauce
  • 1 cup beef broth
  • 1 tsp sugar
  • 1 tsp dried oregano or basil
  • 1 tbsp olive oil (optional, for browning)

Instructions

1. Prepare the Meatballs

In a large bowl, combine ground beef, uncooked rice, finely chopped onion, minced garlic, egg, Worcestershire sauce, salt, and black pepper. Mix until well combined.

2. Shape the Meatballs

Form the mixture into small, evenly-sized meatballs, about the size of a golf ball.

3. Prepare the Sauce

In a separate bowl, mix together tomato sauce, beef broth, sugar, and dried herbs.

4. Cooking Options

Stovetop Method – In a large skillet, heat a small amount of olive oil over medium heat. Brown the meatballs on all sides, then pour in the sauce. Cover and simmer for about 35-40 minutes, stirring occasionally.

Oven Method – Place meatballs in a baking dish, pour the sauce over them, cover with foil, and bake at 350°F for about 45 minutes.

Slow Cooker Method – Place meatballs in the slow cooker, cover with sauce, and cook on low for 6-8 hours or high for 3-4 hours.

5. Serve

Once cooked, serve hot with mashed potatoes, rice, or crusty bread.

Notes

  • Turkey or Chicken – Swap the beef for ground turkey or chicken for a leaner option.
  • Brown Rice – Use brown rice instead of white rice for added fiber and nutrients.
  • Spicy Kick – Add red pepper flakes or hot sauce to the sauce for extra heat.
  • Cheesy Twist – Sprinkle shredded mozzarella or Parmesan on top before serving.
