  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup Asiago cheese, grated
  • 1/2 tsp dried thyme (or fresh thyme leaves for garnish)
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.
  2. Cook the Chicken: In a large skillet over medium heat, heat olive oil and butter. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove from the pan and set aside.
  3. Sauté the Mushrooms: In the same skillet, add more butter if needed, then add the mushrooms. Sauté until they are tender and browned, about 5 minutes.
  4. Add Garlic and Broth: Stir in the minced garlic and cook for another 30 seconds until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  5. Make the Creamy Sauce: Reduce heat and add heavy cream, stirring to combine. Let it simmer for a couple of minutes to thicken.
  6. Melt the Asiago Cheese: Stir in the grated Asiago cheese, allowing it to melt into the sauce. If using, add red pepper flakes for extra heat.
  7. Return the Chicken: Place the cooked chicken breasts back into the skillet, spooning sauce over the top. Let them simmer for a few more minutes until the chicken is fully cooked.
  8. Garnish and Serve: Sprinkle fresh thyme and parsley over the dish. Serve hot with your choice of side.
