- 2 large chicken breasts
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup Asiago cheese, grated
- 1/2 tsp dried thyme (or fresh thyme leaves for garnish)
- 1 tbsp fresh parsley, chopped
- 1/4 tsp red pepper flakes (optional)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.
- Cook the Chicken: In a large skillet over medium heat, heat olive oil and butter. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove from the pan and set aside.
- Sauté the Mushrooms: In the same skillet, add more butter if needed, then add the mushrooms. Sauté until they are tender and browned, about 5 minutes.
- Add Garlic and Broth: Stir in the minced garlic and cook for another 30 seconds until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
- Make the Creamy Sauce: Reduce heat and add heavy cream, stirring to combine. Let it simmer for a couple of minutes to thicken.
- Melt the Asiago Cheese: Stir in the grated Asiago cheese, allowing it to melt into the sauce. If using, add red pepper flakes for extra heat.
- Return the Chicken: Place the cooked chicken breasts back into the skillet, spooning sauce over the top. Let them simmer for a few more minutes until the chicken is fully cooked.
- Garnish and Serve: Sprinkle fresh thyme and parsley over the dish. Serve hot with your choice of side.
