Description

A delicious and easy one-pan Garlic Parmesan Chicken and Potatoes recipe, perfect for busy weeknights. Juicy chicken with a garlicky parmesan crust pairs with crispy, golden potatoes for a flavorful, hassle-free dinner. Ready in just 45 minutes!

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Baby potatoes (or Yukon Gold potatoes)
  • Garlic (freshly minced)
  • Parmesan cheese (grated)
  • Olive oil
  • Butter
  • Italian seasoning
  • Paprika
  • Salt
  • Black pepper
  • Fresh parsley (for garnish)
  • Red pepper flakes (optional for heat)

Instructions

  1. Preheat the Oven – Set the oven to 400°F (200°C) and grease a large baking dish or sheet pan with olive oil.
  2. Prepare the Chicken – Pat dry the chicken with paper towels and season both sides with salt, black pepper, paprika, and Italian seasoning.
  3. Prepare the Potatoes – Halve or quarter the baby potatoes, ensuring they are uniform in size for even cooking. Toss them in a bowl with olive oil, minced garlic, salt, and black pepper.
  4. Sear the Chicken – In a large skillet over medium-high heat, melt butter and sear the chicken for 2-3 minutes per side until golden brown. Remove from heat.
  5. Assemble the Dish – Transfer the seared chicken to the prepared baking dish and arrange the seasoned potatoes around it.
  6. Add Parmesan and Garlic – Sprinkle grated parmesan cheese and additional minced garlic over the chicken and potatoes.
  7. Bake – Place the dish in the preheated oven and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  8. Broil for Crispiness – For an extra crispy top, broil the dish for 2-3 minutes until the cheese turns golden brown.
  9. Garnish and Serve – Sprinkle with fresh chopped parsley and red pepper flakes (if using). Serve hot and enjoy!

Notes

  • Vegetable Boost – Add broccoli, bell peppers, or asparagus to the pan for a more balanced meal.
  • Different Cheese – Swap parmesan for pecorino or cheddar for a twist in flavor.
  • Spicy Kick – Increase the red pepper flakes or add cayenne for heat lovers.
  • Alternate Protein – Try using bone-in chicken thighs, turkey cutlets, or even salmon.
  • Dairy-Free Option – Omit the parmesan and use a dairy-free butter alternative.
