  • 4 chicken thighs or 2 chicken breasts
  • 1 lb baby potatoes (or any waxy potatoes)
  • 4 garlic cloves, minced
  • 4 tbsp butter, melted
  • 2 tbsp olive oil
  • ½ cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 tbsp fresh parsley (for garnish)

Instructions

  1. Preheat Oven – Set your oven to 400°F (200°C).
  2. Prepare the Chicken – Pat the chicken dry with a paper towel and season with salt, black pepper, paprika, and Italian seasoning.
  3. Prepare the Potatoes – Cut baby potatoes in half and toss them with olive oil, salt, pepper, and a portion of the minced garlic.
  4. Arrange in a Baking Dish – Spread the potatoes evenly in a large baking dish. Place the seasoned chicken on top.
  5. Make Garlic Butter Sauce – In a small saucepan, melt butter and stir in the remaining garlic.
  6. Drizzle and Bake – Pour the garlic butter over the chicken and potatoes. Bake for 30 minutes.
  7. Add Parmesan – Sprinkle Parmesan cheese over the chicken and potatoes, then return to the oven for an additional 10 minutes until the cheese melts and the chicken reaches an internal temperature of 165°F (75°C).
  8. Garnish and Serve – Sprinkle with fresh parsley before serving.
