  • Total Time: 35-40 minutes
  • Yield: 12 muffins 1x

Description

Gooey Cinnamon Cream Cheese Muffins are soft, spiced muffins with a rich cream cheese filling. Perfect for breakfast, brunch, or dessert, these muffins are easy to make and irresistibly delicious!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 3/4 cup yogurt or sour cream
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tbsp milk (optional, for glaze)
  • 2 tbsp butter (optional, for extra richness)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the wells.
  2. Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Mix the Wet Ingredients: In a separate bowl, beat the eggs and mix in the vanilla extract, vegetable oil, and yogurt (or sour cream). Stir until well combined.
  4. Combine Wet and Dry Ingredients: Gradually fold the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.
  5. Prepare the Cream Cheese Filling: In another bowl, beat the cream cheese with powdered sugar until smooth and creamy.
  6. Assemble the Muffins: Fill each muffin cup halfway with the batter, then add a spoonful of the cream cheese mixture in the center. Top with more batter, covering the filling.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted near the edge (not the center) comes out clean.
  8. Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Optionally, drizzle with a simple glaze made from powdered sugar and milk.

Notes

  • Nutty Crunch: Add chopped pecans or walnuts for extra texture.
  • Apple-Cinnamon Twist: Fold in small diced apples for a fruity addition.
  • Maple Glaze: Drizzle with a maple syrup glaze for added warmth.
  • Pumpkin Spice: Replace some of the cinnamon with pumpkin spice for a seasonal variation.
  • Chocolate Drizzle: A drizzle of melted chocolate can take these muffins to the next level.
