Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the wells.
- Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Mix the Wet Ingredients: In a separate bowl, beat the eggs and mix in the vanilla extract, vegetable oil, and yogurt (or sour cream). Stir until well combined.
- Combine Wet and Dry Ingredients: Gradually fold the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.
- Prepare the Cream Cheese Filling: In another bowl, beat the cream cheese with powdered sugar until smooth and creamy.
- Assemble the Muffins: Fill each muffin cup halfway with the batter, then add a spoonful of the cream cheese mixture in the center. Top with more batter, covering the filling.
- Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted near the edge (not the center) comes out clean.
- Cool and Serve: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Optionally, drizzle with a simple glaze made from powdered sugar and milk.
