Instructions
- Prepare the Ingredients – If the chicken is not already cooked, boil or bake until fully done, then shred it into small pieces. Finely chop the fresh broccoli.
- Mix the Ingredients – In a large bowl, combine the shredded chicken, chopped broccoli, eggs, almond flour, grated parmesan cheese, minced garlic, onion powder, salt, black pepper, and paprika. Mix until well incorporated.
- Form the Fritters – Take a small portion of the mixture and shape it into a patty. Repeat with the remaining mixture.
- Heat the Oil – In a large skillet, heat olive oil or avocado oil over medium heat.
- Cook the Fritters – Place the fritters in the skillet, ensuring they don’t overcrowd. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Drain and Serve – Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve hot with your favorite dipping sauce.
