Keto-Friendly Broccoli Chicken Fritters

  • Total Time: 25 minutes
  • Yield: 4 fritters 1x

Description

Keto-friendly broccoli chicken fritters are a crispy, protein-packed snack or meal that’s low in carbs and full of flavor. Perfect for meal prep, quick dinners, or as a healthy appetizer.

Ingredients

Scale
  • 2 cups chicken breast, cooked and shredded
  • 1 cup fresh broccoli, finely chopped
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil or avocado oil (for frying)

Instructions

  1. Prepare the Ingredients – If the chicken is not already cooked, boil or bake until fully done, then shred it into small pieces. Finely chop the fresh broccoli.
  2. Mix the Ingredients – In a large bowl, combine the shredded chicken, chopped broccoli, eggs, almond flour, grated parmesan cheese, minced garlic, onion powder, salt, black pepper, and paprika. Mix until well incorporated.
  3. Form the Fritters – Take a small portion of the mixture and shape it into a patty. Repeat with the remaining mixture.
  4. Heat the Oil – In a large skillet, heat olive oil or avocado oil over medium heat.
  5. Cook the Fritters – Place the fritters in the skillet, ensuring they don’t overcrowd. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  6. Drain and Serve – Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve hot with your favorite dipping sauce.

Notes

  • Cheese Lover’s Version – Add shredded mozzarella or cheddar cheese to the mixture for an extra cheesy flavor.
  • Spicy Kick – Incorporate red pepper flakes or diced jalapeños for a spicy twist.
  • Dairy-Free Option – Omit the parmesan cheese and replace it with nutritional yeast for a similar umami taste.
  • Baked Alternative – Instead of frying, bake the fritters at 375°F (190°C) for 20-25 minutes, flipping halfway through for even crispness.
