Meat Rolls:

  • 1 lb thinly sliced beef, pork, or chicken
  • 1 cup mushrooms, finely chopped
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 small carrot, grated
  • ½ cup shredded cheese (optional)
  • ¼ cup breadcrumbs
  • 2 tbsp butter or oil
  • 1 cup broth (beef, chicken, or vegetable)
  • ½ cup sour cream
  • 1 tbsp mustard (optional)
  • Salt & pepper, to taste
  • Fresh herbs (dill or parsley), for garnish
  • Toothpicks or kitchen twine

Instructions

 Prepare the Meat

  • Lay out thin slices of meat and gently pound them with a meat mallet to an even thickness.

2. Prepare the Filling

  • Sauté mushrooms, onions, garlic, and carrots in butter or oil until softened.
  • Season with salt and pepper. If using cheese, set aside.

3. Assemble the Rolls

  • Place a spoonful of filling onto each meat slice. Add shredded cheese or breadcrumbs if desired.

4. Roll & Secure

  • Tightly roll up the meat and secure it with toothpicks or kitchen twine.

5. Sear the Rolls

  • Heat oil in a skillet over medium heat. Brown the meat rolls on all sides.

6. Simmer in Sauce

  • Add broth, sour cream, and mustard (if using) to the skillet.
  • Cover and simmer for 30–40 minutes until the meat is tender and the sauce thickens.

7. Serve

  • Remove toothpicks or twine. Garnish with fresh herbs and serve with potatoes, rice, or bread.
