Meat Rolls:
- 1 lb thinly sliced beef, pork, or chicken
- 1 cup mushrooms, finely chopped
- 1 small onion, diced
- 1 clove garlic, minced
- 1 small carrot, grated
- ½ cup shredded cheese (optional)
- ¼ cup breadcrumbs
- 2 tbsp butter or oil
- 1 cup broth (beef, chicken, or vegetable)
- ½ cup sour cream
- 1 tbsp mustard (optional)
- Salt & pepper, to taste
- Fresh herbs (dill or parsley), for garnish
- Toothpicks or kitchen twine
Instructions
Prepare the Meat
- Lay out thin slices of meat and gently pound them with a meat mallet to an even thickness.
2. Prepare the Filling
- Sauté mushrooms, onions, garlic, and carrots in butter or oil until softened.
- Season with salt and pepper. If using cheese, set aside.
3. Assemble the Rolls
- Place a spoonful of filling onto each meat slice. Add shredded cheese or breadcrumbs if desired.
4. Roll & Secure
- Tightly roll up the meat and secure it with toothpicks or kitchen twine.
5. Sear the Rolls
- Heat oil in a skillet over medium heat. Brown the meat rolls on all sides.
6. Simmer in Sauce
- Add broth, sour cream, and mustard (if using) to the skillet.
- Cover and simmer for 30–40 minutes until the meat is tender and the sauce thickens.
7. Serve
- Remove toothpicks or twine. Garnish with fresh herbs and serve with potatoes, rice, or bread.
