  • 1 (15 oz) can black beans, drained
  • 2 tbsp tomato paste
  • 1 jalapeño, sliced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Nachos:

  • 1 large bag tortilla chips
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded Monterey Jack cheese

For Toppings:

  • ½ cup sour cream
  • 2 green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 small tomato, diced
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions

  • Prepare the Chili: In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  • Sauté the Aromatics: Add chopped onions and minced garlic. Cook until softened and fragrant.
  • Add Seasonings & Tomatoes: Stir in chili powder, cumin, paprika, salt, and black pepper. Add diced tomatoes and tomato paste, mixing well.
  • Incorporate the Beans & Simmer: Add black beans and jalapeños. Let simmer for 15 minutes, stirring occasionally, until thickened.
  • Assemble the Nachos: Preheat oven to 375°F (190°C). Arrange tortilla chips on a large baking sheet. Spoon chili over the chips and top with shredded cheeses.
  • Bake Until Melted: Bake for 10 minutes, or until cheese is bubbly and melted.
  • Add Fresh Toppings: Remove from the oven and garnish with diced tomatoes, avocado, green onions, and cilantro.
  • Serve & Enjoy: Drizzle with sour cream, squeeze fresh lime juice, and serve immediately.

Notes
