Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tsp mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 oz macaroni pasta
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup heavy cream
  • 1/2 tsp paprika
  • 1/4 tsp nutmeg
  • 1/4 cup panko breadcrumbs (optional, for topping)

Instructions

Step 1: Prepare the Meatloaf Base

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large mixing bowl, combine ground beef, onion, garlic, bread crumbs, egg, Worcestershire sauce, ketchup, mustard, salt, and pepper.
  3. Mix until well combined, then press the mixture evenly into the prepared baking dish to form the base layer.
  4. Bake for 20–25 minutes, or until the meatloaf is partially cooked but not fully done.

Step 2: Cook the Macaroni

  1. While the meatloaf is baking, cook macaroni pasta according to package instructions until al dente.
  2. Drain the pasta and set aside.

Step 3: Make the Cheese Sauce

  1. In a saucepan over medium heat, melt butter and whisk in flour to create a roux.
  2. Gradually add milk and heavy cream, whisking constantly until the mixture thickens.
  3. Stir in cheddar cheese and Parmesan cheese, mixing until melted and smooth.
  4. Season with salt, pepper, paprika, and nutmeg for added flavor.

Step 4: Assemble the Casserole

  1. Remove the meatloaf from the oven and carefully spread the cooked macaroni over the top.
  2. Pour the cheese sauce evenly over the pasta, ensuring it covers all areas.
  3. (Optional) Sprinkle panko breadcrumbs on top for a crispy finish.

Step 5: Bake and Serve

  1. Return the casserole to the oven and bake for an additional 15–20 minutes, or until the cheese is bubbly and golden brown.
  2. Let it cool for 5–10 minutes before serving.

Notes

  • Spicy Version: Add diced jalapeños or crushed red pepper flakes to the meatloaf mixture.
  • Protein Swap: Use ground turkey or chicken instead of beef for a leaner option.
  • Extra Cheesiness: Mix different cheeses like Monterey Jack, Gouda, or Gruyère into the cheese sauce.
  • Veggie Boost: Incorporate finely chopped bell peppers, carrots, or mushrooms into the meatloaf mix.
