- 2 tbsp butter
- 2 tbsp flour
- 1/2 cup heavy cream
- 1/2 tsp paprika
- 1/4 tsp nutmeg
- 1/4 cup panko breadcrumbs (optional, for topping)
Instructions
Step 1: Prepare the Meatloaf Base
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large mixing bowl, combine ground beef, onion, garlic, bread crumbs, egg, Worcestershire sauce, ketchup, mustard, salt, and pepper.
- Mix until well combined, then press the mixture evenly into the prepared baking dish to form the base layer.
- Bake for 20–25 minutes, or until the meatloaf is partially cooked but not fully done.
Step 2: Cook the Macaroni
- While the meatloaf is baking, cook macaroni pasta according to package instructions until al dente.
- Drain the pasta and set aside.
Step 3: Make the Cheese Sauce
- In a saucepan over medium heat, melt butter and whisk in flour to create a roux.
- Gradually add milk and heavy cream, whisking constantly until the mixture thickens.
- Stir in cheddar cheese and Parmesan cheese, mixing until melted and smooth.
- Season with salt, pepper, paprika, and nutmeg for added flavor.
Step 4: Assemble the Casserole
- Remove the meatloaf from the oven and carefully spread the cooked macaroni over the top.
- Pour the cheese sauce evenly over the pasta, ensuring it covers all areas.
- (Optional) Sprinkle panko breadcrumbs on top for a crispy finish.
Step 5: Bake and Serve
- Return the casserole to the oven and bake for an additional 15–20 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for 5–10 minutes before serving.
Notes
- Spicy Version: Add diced jalapeños or crushed red pepper flakes to the meatloaf mixture.
