Instructions

  1. Toast the Rice – In a large skillet or saucepan, heat oil over medium heat. Add the rice and stir continuously until it turns golden brown, about 3-5 minutes.
  2. Sauté the Aromatics – Add chopped onions and minced garlic to the pan, cooking for another minute until fragrant.
  3. Incorporate the Tomato Base – Stir in tomato sauce and diced tomatoes, allowing them to blend with the rice.
  4. Add Seasonings and Broth – Sprinkle cumin, chili powder, salt, and black pepper over the rice mixture. Pour in the chicken or vegetable broth and stir well.
  5. Simmer Until Cooked – Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  6. Mix in Vegetables – If using peas and carrots, stir them in during the last 5 minutes of cooking.
  7. Fluff and Serve – Remove from heat, let it sit for 5 minutes, then fluff with a fork. Garnish with fresh cilantro and serve with lime wedges.
