Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp Old Bay seasoning
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 cup romaine lettuce, shredded
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1 jalapeño, sliced (optional)
  • 1/2 cup cooked rice (optional)
  • 1/2 cup black beans (optional)

Instructions

  1. Prepare the Shrimp – In a bowl, toss the shrimp with olive oil and Old Bay seasoning until evenly coated.
  2. Cook the Shrimp – Heat a skillet over medium-high heat and cook the shrimp for about 2-3 minutes per side until they turn pink and opaque. Remove from heat.
  3. Prepare the Toppings – Slice the avocado, halve the cherry tomatoes, thinly slice the red onion, and shred the romaine lettuce.
  4. Warm the Tortillas – Heat the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  5. Assemble the Burritos – Spread a layer of sour cream or Greek yogurt onto each tortilla. Add a scoop of cooked shrimp, followed by avocado, tomatoes, red onion, lettuce, shredded cheese, and any additional toppings like jalapeño, rice, or black beans.
  6. Wrap the Burritos – Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose the filling.
  7. Serve and Enjoy – Slice in half and serve with lime wedges and fresh cilantro.

Notes

  • Spicy Kick – Add a drizzle of hot sauce or sprinkle some cayenne pepper on the shrimp.
  • Low-Carb Option – Use lettuce wraps instead of tortillas.
  • Dairy-Free – Swap out sour cream and cheese for dairy-free alternatives.
  • Grilled Version – Grill the shrimp for a smoky flavor.
  • Tropical Twist – Add mango salsa for a sweet and tangy contrast.
