Ingredients

Scale
  • 1 lb chicken breast or thighs, sliced
  • 3 garlic cloves, minced
  • 3 tbsp honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tsp ginger, minced
  • 1 tbsp sesame oil
  • 2 cups chicken broth
  • 8 oz noodles (spaghetti, rice noodles, or ramen)
  • 1/2 cup carrots, julienned
  • 1/2 cup bell peppers, sliced
  • 2 green onions, chopped
  • 1 tbsp sesame seeds
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions

  1. Prepare Ingredients: Slice chicken, mince garlic and ginger, and chop vegetables.
  2. Cook Chicken: Heat sesame oil in a large pot over medium heat. Add chicken, season with salt and pepper, and cook until browned. Remove and set aside.
  3. Sauté Aromatics: In the same pot, sauté garlic and ginger until fragrant (about 30 seconds).
  4. Make Sauce: Stir in honey, soy sauce, chicken broth, and red pepper flakes. Bring to a simmer.
  5. Cook Noodles: Add noodles to the pot, ensuring they are submerged. Cover and cook, stirring occasionally, until tender.
  6. Add Vegetables & Chicken: Stir in carrots, bell peppers, and cooked chicken. Cook for a few more minutes until veggies are tender-crisp.
  7. Thicken Sauce (Optional): Mix cornstarch with water and stir into the pot, allowing it to thicken.
  8. Finish & Serve: Garnish with green onions and sesame seeds. Serve hot and enjoy!

Notes

  • Vegetarian: Replace chicken with tofu or mushrooms.
  • Different Proteins: Swap chicken for shrimp, beef, or rotisserie chicken.
  • Gluten-Free: Use tamari and gluten-free noodles.
