- For the Avocado Crema:
- 1 avocado
- 1/4 cup Greek yogurt
- 2 tbsp fresh cilantro
- 1 tbsp lime juice
- 1 small jalapeño (optional)
- 1 clove garlic
- 1/2 tsp honey
- 1/4 tsp salt
- For Assembly:
- 8 small tortillas (corn or flour)
- 1/4 cup diced red onion
- 1/2 cup cherry tomatoes, halved
- 1 cup shredded cabbage (red or green)
- 2 radishes, thinly sliced
- 1/4 cup crumbled cotija or feta cheese
- Extra lime wedges for serving
Instructions
- Prepare the Salmon
- Preheat oven to 400°F (200°C) or heat a grill to medium-high heat.
- In a small bowl, mix olive oil, lime juice, garlic powder, smoked paprika, cumin, chili powder, salt, and black pepper.
- Rub the marinade generously over the salmon fillets.
- Bake for 12-15 minutes or grill for 4-5 minutes per side until cooked through.
- Let rest for a few minutes before flaking into bite-sized pieces.
- Make the Avocado Crema
- Blend avocado, Greek yogurt, cilantro, lime juice, jalapeño (if using), garlic, honey, and salt in a food processor until smooth.
- Add a splash of water if needed for desired consistency. Adjust seasoning to taste.
- Assemble the Tacos
- Warm tortillas on a skillet or directly over an open flame.
- Spread avocado crema on each tortilla.
- Top with flaked salmon, shredded cabbage, diced red onion, cherry tomatoes, and radish slices.
- Sprinkle with cotija or feta cheese.
- Finish with lime juice and fresh cilantro. Serve immediately and enjoy!
