- 3–4 lbs beef chuck roast
- 4 cups beef broth
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 6 French rolls or hoagie buns
- 6 slices provolone or Swiss cheese (optional)
- 2 tbsp butter
Instructions
- Prepare the Slow Cooker – Place the sliced onions and minced garlic at the bottom of the slow cooker.
- Season the Beef – Rub the chuck roast with salt, black pepper, thyme, and rosemary.
- Add to the Slow Cooker – Place the seasoned roast on top of the onions and garlic.
- Make the Broth – In a separate bowl, mix beef broth, Worcestershire sauce, soy sauce, and a bay leaf. Pour over the beef in the slow cooker.
- Cook Low and Slow – Cover and cook on low for 8 hours or until the beef is tender and easily shreddable.
- Shred the Meat – Remove the beef from the slow cooker, shred it using two forks, and return it to the pot to soak in the juices.
- Prepare the Rolls – Slice the French rolls and lightly butter them. Toast in a skillet or oven until golden.
- Assemble the Sandwiches – Pile shredded beef onto the toasted rolls and top with provolone or Swiss cheese, if desired.
- Make the Au Jus – Strain the remaining liquid in the slow cooker to serve as the dipping sauce.
- Serve and Enjoy – Serve the sandwiches hot with a side of au jus for dipping.
