Description

  • 34 lbs beef chuck roast
  • 4 cups beef broth
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 French rolls or hoagie buns
  • 6 slices provolone or Swiss cheese (optional)
  • 2 tbsp butter

Instructions

  1. Prepare the Slow Cooker – Place the sliced onions and minced garlic at the bottom of the slow cooker.
  2. Season the Beef – Rub the chuck roast with salt, black pepper, thyme, and rosemary.
  3. Add to the Slow Cooker – Place the seasoned roast on top of the onions and garlic.
  4. Make the Broth – In a separate bowl, mix beef broth, Worcestershire sauce, soy sauce, and a bay leaf. Pour over the beef in the slow cooker.
  5. Cook Low and Slow – Cover and cook on low for 8 hours or until the beef is tender and easily shreddable.
  6. Shred the Meat – Remove the beef from the slow cooker, shred it using two forks, and return it to the pot to soak in the juices.
  7. Prepare the Rolls – Slice the French rolls and lightly butter them. Toast in a skillet or oven until golden.
  8. Assemble the Sandwiches – Pile shredded beef onto the toasted rolls and top with provolone or Swiss cheese, if desired.
  9. Make the Au Jus – Strain the remaining liquid in the slow cooker to serve as the dipping sauce.
  10. Serve and Enjoy – Serve the sandwiches hot with a side of au jus for dipping.
